Delicious Lamb Bobotie Spring Rolls Recipe

Autumn and Winter are my favorite seasons although I must admit I do miss Summer when I think back to our December Summer beach holiday in Plettenberg Bay.

One of my fondest memories from our December holiday has to be our visit to Bramon Wine Estate where we enjoyed an afternoon filled with bubbly and gorgeous Tapas all whilst sitting in between the wine estate grape vines which as promised  added sparkle to our already amazing holiday.

The afternoon was one that will not be easily forgotten and if you ever have a chance to go to Plettenberg Bay, this is definitely a must do activity to add to the list.

Although everything was super scrumptious and delicious including the Strawberry and Biltong salad, there was definitely another favorite among  the family: the Bobotie Spring Rolls. I have never been a huge fan of the South African  sweet mince when made in the traditional way but when served as little canape sized treats, the meal was transformed into an exotic burst of flavour that I’m sure my family would agree is very much moreish.

I set out to find a recipe for Bobotie to replicate our Bramon Wine Estate experience and with my current love of all things Phyllo Pastry, I attempted to make my very own Bobotie Spring Rolls. They turned out to be a success and are amazing delicious bundles of joy.  Although quite messy to make, the effort is so worth it. I love the smell of roasted almonds and have combined a few Bobotie recipes with my own adaptations by using some home chef kitchen license. I am a big believer in trying to use what I have in my pantry rather than buying specific special ingredients. The end result is super delicious which is sure to induce  an awesome high five moment from husbands and guests.  These gorgeous little treats go very well with Pomegranate juice complimenting the spices and the robust fruity flavour of the mince. Most recipes call for deep frying when it comes to Phyllo pastry but I prefer to use the oven.

*A quick tip I have learnt when chopping onions is to peel them under running cold water and then chop them in a clean glass dish of water, guaranteed no tears.

My Lamb  Bobotie Spring Rolls Recipe

This recipe can make 18- 24 Spring Rolls

Ingredients 

Group A

25 g Butter
30 ml Olive Oil
15 ml Grated Fresh Ginger
15 ml Brown Sugar
5 ml Cayenne Pepper (or Chilli powder)
5 ml Tumeric
5ml Chinese five spice (optional)
2.5 ml Salt
25 ml Spring Onion chopped
1 Onion chopped
1 slice of White Bread, crust removed, soaked in 125ml milk
500g Lamb Mince (or beef if you prefer)

Group B

60 ml Raisins soaked in either Port or Sherry (I used Sherry as I had this readily available)
25 ml Chutney
15 ml Apricot Jam
10 ml Worcestershire Sauce
15 ml Tomato Sauce
100 ml Almond flakes dry pan roasted
Phyllo Pastry
Melted Butter

Recipe Method

Lamb Bobotie Mince

  1. Soak the raisins in port or sherry and set aside
  2. Soak the bread in milk and set aside
  3. Heat the butter and oil together in a medium sized pot – take care not to burn the butter and oil
  4. Add the fresh ginger, brown sugar, Cayenne Pepper, Tumeric, Chinese Five Spice, Salt and Spring Onions and Onion to the pot and stir fry until the onions are soft
  5. Add the lamb mince to the pot and brown
  6. Mash the bread with a fork and add to the browned mince mixture
  7. Drain the raisins and add to the mince, mix over a medium heat
  8. Roast the Almonds in a dry non-stick pan (watch these carefully as they burn easily)
  9. Add the chutney, apricot jam, Worcestershire sauce, Tomato Sauce to the mince
  10. Simmer for 10 – 15 minutes on medium heat
  11. Add the roasted almonds to the mixture and mix gently
  12. Let the mince cool

Spring Rolls 

  1. Pre-heat the oven to 160 Celsius
  2. Prepare a baking tray with a non stick coating
  3. Cut two sheets of Phyllo pastry into squares
  4. Using the melted butter, brush the top and bottom of each layer of pastry and use two layers for your parcel
  5. Add a tablespoon of the mince mixture to the center of the pastry
  6. Roll the pastry and tuck and fold in on the ends to create a parcel
  7. Place your parcels onto the baking tray and bake for 20 minutes
  8. Adjust the oven to grill for 3-4 minutes to crisp up the pastry
  9. Serve with a side of Sweet Chilli Sauce and vegetables of your choice

A proud South African moment with @JoburgStyle @BainsWhisky #ReaderEvent

I am not a big drinker so when I received the invite to @JoburgStyleMag reader event with @BainsWhisky I knew I had to bring along a guest who’s palate is a lot more adept to whiskey than mine. Who better to join me than my scotch loving Dad.  Although Bain’s Whisky (note the spelling is not whiskey which is American but rather it is spelt correctly as this whisky comes from SA) is not a scotch, Dad was the perfect person to try this whisky that was voted as the best grain whisky in the world in 2013. A major accomplishment and proudly South African.

Rand Lords was the perfect venue for this majestic brand of whisky with the full 360 degree view of the Johannesburg city skyline on the 22nd floor of the South Point Towers. We were treated to an informative presentation given by whisky lover and expert Andy Watts who tantalized our taste buds with the promise of vanilla and toffee notes. A blend that is gentle on the palate with the perfect amount of sweetness achieved by using American Oak Casks infused with Lignin and Lanolin to achieve a totally natural sweet taste. Take the sweetness and oiliness of Jack Daniels fused with the smoothness of Jameson, add at least three years maturation time and the result is a light, palatable, sweet, smooth, pleasant surprise that is  Bain’s Cape Mountain Whisky.

The secret behind Bain’s Whisky is where it is produced. In Wellington, 45 minutes from Cape Town on the banks of the Berg River. We learnt that the climate of the Cape make this a perfect place to distill whisky as the alcohol dissipates at a quicker rate than our Scottish counterparts who live in a cold climate.

Who knew that the legs of the whisky are not referring to appendages that can run away with us but rather how thick or thin the viscosity of the whisky is. Whisky can be judged by its aroma, its colour and its legs but most importantly it should be paired with complimentary food items to really capture its essence. Bain’s Whisky pairs well with cashew nuts, cajun flavorings, smoked chicken and salmon. We were delighted to enjoy food pairings that complimented the taste of Bain’s.

download (1)Whether you like your Whisky on the rocks, straight or with a chaser, according to the experts there is no wrong way to enjoy your whisky however when doing a tasting, it is best to serve the whisky with the same amount of ambient temperature water to ensure the aromas’s are released and the maximum flavor can be enjoyed.

My judge for the evening ended off by stating that he would indeed buy this whisky and found it to be very soft and pleasant on the palate. Enjoy your Bain’s with ginger ale for a lighter refreshing drink or on the rocks as a night cap. Either way, an impressive blend that continues to make SA proud.

I am pleased to announce that since drafting this post, my Dad has purchased a lovely gift set of Bain’s Whisky for my husbands birthday gift and my husband has taken a strong liking to the whisky as well. This is definitely a lovely gift to give and since Fathers day is fast approaching,  don’t youthis stylish square bottle and great tasting whisky would be a lovely way to spoil our SA Dads.

Fashion at the annual South African Theater @NalediAwardsSA for 2013 Productions

Theater runs deep in my family. My Father met my Mother on stage at a City Of Johannesburg Theater production. I love going to the Theater, the costume jewelry, the lights, the stage sets, the music, the costumes, the energy that only theater can create never fail to capture a part of my heart and soul. I love everything about theater and perhaps one of these days I may revisit my child hood years and perform again onstage.

Theater in South Africa contributes 14% of the countries National GDP. Spending a night at  such an awe inspiring gala event will not easily be forgotten. Not only were the people gracious and elegant, there was something special that captured my heart and all my love for the arts has reignited the stage loving school girl inside of me.

The stage performances were incredible and the acceptance speeches were genuine and heart felt. I am proud to be South African and this will be the first of many posts about our South African stage. Today I bring you a few pictures of my favourite outfits that were worn last night.All the ladies looked breathtakingly beautiful. I loved every second of the night including the tears that came with the life time achievers award and the community theater awards.
